You’ve probably seen this recipe all over the place, but it really is so delicious and easy. We actually only make it about once a year, on May the 4th. We call them Han Solo Rolo Cookies in honor of “May the Fourth Be With You” :). Soft, chocolatey, caramely, gooey… who can go wrong with that?!?

Ingredients
- 1 chocolate cake mix
- 1 stick of butter, melted
- 1 egg
- About 24 unwrapped Rolo candies
How to Make Rolo Cookies
- Mix together dry cake mix, egg, and melted butter. It will be thick and kind of greasy!
- Wrap about two tablespoons of dough around one unwrapped Rolo candy and place on greased cookie sheet about two inches apart.
- Bake at 350 degrees for 8 minutes.
- Let sit for a couple of minutes on the pan and then remove to a cooling rack to finish cooling.
That’s it! So easy! And they always get devoured!
You could easily substitute any of your favorite small candy pieces in place of the Rolos! We just really like the caramel and chocolate combination. A soft cookie with a gooey center. So fun for our Star Wars themed meal!

We use this recipe for our cheeseball. My son just decorated it all cute with slices of turkey, nuts and crackers to make it look like an Ewok! So easy and it really made the basic cheeseball feel more festive. Good thing I have creative kids 🙂
