Soft and Gooey Rice Krispy Treats

Rice krispy treats are one of my most favorite simple desserts. They are so easy to make and hardly take any time at all. And it seems like everyone always likes them. As long as they aren’t too dry or crunchy.

There are tons of different variations out there, but I’ve found the trick to a soft rice krispy treat is not skimping on the butter and marshmallows. Yeah, they’ll have a few more calories, but they are so much better when they are soft and gooey.

And the great thing, is you can easily customize rice krispy treats to any holiday or event by adding color to the marshmallows or candy decorations on top!

Ingredients

  • 1/2 cup (1 stick) butter
  • 16 ounces marshmallows (large or mini is fine)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 9 cups crispy rice cereal

Supplies

  • Large pot
  • Rubber spatula
  • Cooking spray
  • 9×13 dish
  • Measuring cups/spoons

How to make Rice Krispy Treats

  1. Measure ingredients and have everything set out and ready.
  2. Coat the sides of 9×13 dish with cooking spray. Set aside.
  3. In a large pot, melt butter until it foams and bubbles. 3-5 minutes.
  4. Add the marshmallows and cook over low heat, stirring constantly, until melted. It’s okay to leave some lumps.
  5. Add vanilla and salt and stir to combine.
  6. Remove the pot from the heat and stir in the pre-measured rice cereal. Stir well until all the cereal is coated.
  7. Scrape the mixture into the prepared 9×13 pan and lightly press. You don’t want to push it down too hard or it can make it crunchy. Let cool. Cut and enjoy!

Olympic Style Rice Krispy Treats

This is our Olympic version. By adding M&Ms to the top, we had an instant Olympic themed treat. And of course everyone wanted the chocolate on their piece 🙂

  • Separate M&M’s into colors while the rice krispy treats are cooling.
  • Assemble Olympic rings on top of treats. Cut treats right before serving (the rings may get messed up a little bit).
