Our family loves this creamy, cheesy broccoli chowder. It really is the best broccoli cheese soup I have ever had. It’s extra delicious served in a bread bowl or with crusty bread on the side!
This is one of my daughter’s favorite soups. She is always so happy when I make it for dinner. One time, I made it for a church Fall Festival. We were supposed to bring chili for a chili cook off competition, but I’m not a big fan of chili. So I brought this soup instead! The whole thing was devoured. I guess maybe there were other people who didn’t want chili that night too :). So go ahead, give it a try. I promise you won’t be disappointed with this soup (if you like cheese, broccoli and yummy things that is).
Ingredients
- 1 pound fresh broccoli
- 1 medium onion, chopped
- 1/4 cup plus 1/2 cup butter
- 1/2 cup flour
- 4 cups milk
- 1 cup chicken broth
- 1 1/2 teaspoons salt
- 2 cups grated cheddar cheese
Makes 6-8 servings
How to make the best broccoli cheese soup
- Step 1: Cook broccoli just until slightly soft. You don’t want it to be mushy because it will still cook in the soup a little bit more. Drain and cut into small pieces. Set aside.
- Step 2: Sauté onion in the 1/4 cup butter in a small fry pan until soft. Set aside to cool.
- Step 3: In a large pot prepare a white sauce by melting 1/2 cup butter over medium heat. Stir in the 1/2 cup flour and well blended. I often use a whisk for this part so that there aren’t any flour chunks. Gradually stir in the milk, chicken broth, and salt. Stir frequently until mixture reaches a boil. Cook for 1-2 minutes until thickened.
- Step 4: Add broccoli and onion.
- Step 5: Stir in cheese.
- Step 6: Cook briefly over medium heat. Don’t bring it to a boil again!
- Step 7: Serve or keep warm over low heat.






Store any leftovers in the fridge for 3-4 days.
