Peanut Butter and Chocolate Chip Granola

This granola is so quick and easy to make!  And it only takes 4 ingredients!  A perfect healthy breakfast or snack!

Sometimes I just really feel like eating granola. I think I convince myself that it is a completely healthy snack. And I know it’s better than eating the Twinkie that likes to call my name from the pantry!

This granola has the perfect mix of peanut butteryness and chocolate. And the oats help me stay full for longer. We like to mix it with yogurt and fresh fruit like strawberries, raspberries, and bananas. But it’s delicious just plain with some milk. And if you need a quick sweet and salty mix in the afternoon before dinner, this is the perfect snack!

Here are your FOUR ingredients! Can you believe it? So simple!

Creamy peanut butter, honey, oats, and chocolate chips.

I like to measure everything out in advance so it’s super easy to combine it all together.

Preheat your oven to 325 degrees.

Then measure out the peanut butter and honey and scoop into a large microwave safe bowl.

Next, microwave on high for 30 seconds to a minute. Let’s be honest. I have no patience for cooking slowly and stirring until it is slightly melted. I cook it for a minute and then give it a good stir. You want the honey to be melted and the peanut butter to be very soft so that they easily combine together.

Next, add in your oats. I just dump them right into the same bowl and carefully mix them together. You want the peanut butter/honey mixture to be mixed in well and coating all of the oats.

After the peanut butter, honey, and oats are well mixed, carefully dump the mixture onto a 18×13 cookie sheet (that’s just the standard sized one). Level it all out. It will fill up the whole sheet!

Place in the oven and set a timer for 15 minutes.

After 15 minutes, remove from the oven, and stir the granola carefully. The goal is to move it around so the edges come to the middle and then everything spreads out again. The granola will feel very soft.

Return to the oven and cook for another 15 minutes.

Again, after the timer goes off, remove from the oven and give it a good, careful stir.

Return to the oven and cook for about another 10 minutes.

At this point, you need to start watching it a little more carefully. In my oven, the granola starts to get brown on the edges. I don’t like it too crispy, so once it starts to turn golden on the edges, I take it out. But cook it however you like it!

Remove from the oven and let cool. The granola will seem very soft at first. It gets crunchy as it cools!

Cool COMPLETELY! Unless of course you want totally melted chocolate chips 🙂

Once cool, stir in the chocolate chips. However much you like! I only stir in about one cup because I like just the hint of chocolate and not totally overpowering the other flavors.

This granola can be stored at room temperature in an airtight container for at least a week, but ours usually doesn’t last that long!

I typically store it in a gallon ziplock bag and it almost completely fills the bag.

Cook Time: 40 minutes
Total Time: 50 minutes

Ingredients

  • 1 1/4 cups creamy peanut butter
  • 3/4 cup honey
  • 8 cups old fashioned oats
  • Semi-sweet chocolate chips to taste

Instructions

  1. Preheat oven to 325 degrees.
  2. Add peanut butter and honey to a large bowl.
  3. Place in the microwave and heat for 30 seconds. Stir and repeat until the honey is melted and the peanut easily stirs in.
  4. Pour in the oats and stir until well coated.
  5. Place on a 13x18 or larger baking sheet.
  6. Bake for 15 minutes.
  7. Remove from oven and stir, making sure to mix in the edges.
  8. Bake for another 15 minutes and stir again.
  9. Bake for about 10 more minutes, but watch it carefully. You don’t want the granola to get too brown on the edges.
  10. Let cool completely. The granola will get crunchier as it cools. It will seem soft when it first comes out of the oven.
  11. Once cool, stir in the desired amount of chocolate chips. 1/2 to 1 cup is usually good.
  12. Mix together and spoon into an airtight container or plastic bag.
  13. Can be stored at room temperature for at least a week. It usually doesn’t last that long!

Notes

This recipe can easily be divided in half or even quarters if you find it is too much for your family. We make a lot because it is so yummy! Just lessen the cook time if you are making less so that it doesn’t burn.
